Like everyone in India this is one of my favorite street food to eat.
*Def. Pani - water
Puri - crisp fried puffed bread
I am not some expert cook, so this is going to be a very simple and fast recipe made with ingredients i had in my kitchen.
P.S. As India is such a vast country with countless taste buds so there is no one recipe for pani-puri it differs from region to region.
As you travel along the states of India this beautiful food changes its name and little bit of its ingredients. Below are some of the names that i know of.

- golgappa( i like to call it by this name)
- pani ke patashe/batashe
- gup-chup
Ingredients
Pani(Water) : 1) 2 cups of water
2) Chopped Pudina(mint) leaves
3) Chopped coriander leaves
4) 1 inch ginger(sliced)
5) 1 green chilly(sliced into two)
6) 2 tablespoon Tamarind(imli) water(add more if more sourness needed)
or
lemon( tamarind was not available with me so i substituted it with lemon)
7) 2 to 3 tablespoon sugar/jaggery
8) 4 to 5 tablespoon jal jeera powder/ chaat masala powder(i used jal-jeera)
9) pinch of red chilly powder
10) Black salt/ regular salt to taste
Mix everything well together.
I kept the water in the fridge for sometime to get the cooling effect. Or simply add ice cubes before you plan to eat.
Stuffing : 1) Potato( 2 to 3 medium sized)
2) onion(chopped)
3) coriander (chopped)
4) chilly(optional)
5) salt
6) pinch of chilly powder
Boil the potato till they are completely cooked.
Now, mash the potatoes and add all the above ingredients and mix well.
Puri(Bread) : I purchased ready to eat pack of the puri (bread).I just had to fry it in oil till it turned golden brown and inflated.
Hope you will try this out. College or employed people staying alone or with roommates can spend one evening making it as it is a fun activity and on the plus side you can eat as many as you like.
How to eat Pani-Puri?
Step 1 : First you should take the crisp ball and make a puncture in the middle with your finger.The hole should be big enough for you to add stuffing in it.
Step 2 : Second, add the potato stuffing, leave some room in the ball for you to add the water later.
Now fill it with the pani(water) you made.
Step 3 : Eat it as a whole and enjoy the chain of pani-puris that's going to go in your mouth.
